Discover the varieties of olive trees in the area

Nevadillo negro

A variety native to the Sierra Morena of Córdoba and more specifically to the towns of Adamuz and Objeto, the nevadillo negro olive is one of those that best adapts to extreme climatic conditions and the poorest soils. Thus, it can withstand very cold winters as well as long, notably dry and hot summers. All these characteristics mean that this olive grows on land that is difficult to mechanize, which is why it is still harvested using the traditional method of "vareado".

The quality of this oil, whose intensity and aromatic variety make it one of the AOVEs of which the PDO Montoro-Adamuz boasts, is unquestionable. With a dense palate, bitter and somewhat spicy nuances, its oil undoubtedly has outstanding nutritional values, in addition, of course, to a unique flavor.

Picual

The picual olive, also known as nevadillo blanco in the Cordoba mountains, coexists with the Nevadillo Negro, both varieties being native to the area. However, the picual is in fact the most common variety in the Spanish territory, mainly due to its resistance to oxidation, which allows it to produce oils with great stability and durability in the conservation of their characteristics and properties.

With a green fruit ending in a point, the oil obtained from this fruit stands out for its high oleic acid content, which makes it a highly demanded product. In the mouth it stands out for its body and powerful flavor, with a hint of bitterness and a certain spiciness the younger the oil is.

Arbequina

Slightly smaller in size than the previous varieties, the arbequina is an olive that offers great resistance to cold. Therefore, in spite of being a traditional variety from other areas of Spain, it has been spreading rapidly throughout the national geography. In addition, on the other hand, it produces a high quality oil.

With fruity scents and a certain aroma of fresh grass, young arbequina oil is softer and more fluid on the palate. The more mature oil is more reminiscent of apple or even vanilla in its aroma. Both give us, however, an almost sweet taste where bitterness and spiciness are barely perceptible.

Hojiblanca

The last of the varieties of our olive oil tourism proposal in Cordoba is the hojiblanca. Coming from the province of Cordoba, but this time more from the Lucena area, this olive takes its name from its characteristic lighter colored leaf than those of other varieties. Its high hardiness makes it very resistant to dry soils and winter temperatures.

The aroma of hojiblanca oil is reminiscent of fresh fruit, freshly cut grass and white flowers. Its tasting offers a slight sharpness in the throat and an almond aftertaste. Finally, its oil, highly valued for its properties and characteristics, is very interesting in coupages with other olive varieties.
