Learn about the mushroom species along the route.

Boletus Edulis

One of the specimens that we can find in our mycological route in Cordoba is this edible mushroom also called pumpkin mushroom. Of considerable size (up to 20 cm in diameter), classic shape, white color and brownish cap, the Boletus Edulis is easily recognizable by a white border outlining its cap. This variety is highly appreciated in gastronomy for its texture and sweet flavor reminiscent of hazelnuts.

Amanita Caesarea

The Caesars amanita is as colorful and peculiar as the names it receives. From huevo de rey to yema de huevo, and the most common, oronjaThis mushroom can be recognized by its bright orange hemispherical cap, as well as by its creamy to golden yellow stem and blades. Its smell and taste are very pleasant, so gastronomically this type of mushroom is a delicacy that can even be eaten raw.

Agaricus Campestris

Much smaller in size than the other two, this wild mushroom is white in color, but has pinkish slices that make it very characteristic. Its consumption is discouraged when its slices blacken due to age. When young, it is excellent for culinary use, being ideal for almost any type of preparation, even raw in salads.

Lepista Nuda

Rather small in size, this fleshy mushroom with a peculiar color between indigo and bluish is another of the species of mushrooms that we can come across during our mycological route in Cordoba. It is easy to distinguish precisely by the tone of his hat, although with the time it is losing his pigmentation. Of the agaricus campestris only the part of the hat is taken advantage of, being all a delight for his singular texture once cooked.

Macrolepiota procera

With a cap that can reach up to 30 cm in diameter, this mushroom, also known as parasol, is another of the species that populate the Sierra Morena in season. Its curious cap is first ovoid, then becoming bell-shaped and finally, to be completely flattened, which gives it the appearance of an umbrella or parasol. In gastronomy it is usually appreciated as a garnish for red meats or to prepare breaded, battered or grilled.

Coprinus Comatus

With a hat with bangs or scales (hence the name "comatus"), it has a very characteristic shape, first ovoid and then flared. Its sepia white color and the scales of the cap give it a very peculiar woolly appearance. It is highly appreciated in gastronomy for its exquisite softness and ease of cooking.
